Anti nutrient  whole grains, legumes, nuts, and seeds. 

Anti-nutrients are compounds found in certain foods, particularly plant-based foods, that can interfere with the absorption or utilization of essential nutrients in the body. Examples include:


1. Phytates (Phytic Acid): Found in whole grains, legumes, nuts, and seeds. Can bind to minerals like zinc, iron, and calcium, reducing their absorption.


2. Oxalates: Found in foods like spinach, beets, rhubarb, and chocolate. Can bind to minerals like calcium, magnesium, and iron, reducing their absorption.


3. Lectins: Found in legumes, grains, and nightshades (like tomatoes and potatoes). Can cause inflammation and interfere with nutrient absorption.


4. Saponins: Found in legumes, grains, and some vegetables. Can interfere with nutrient absorption and cause gastrointestinal issues.


5. Tannins: Found in tea, coffee, chocolate, and some fruits and grains. Can bind to proteins and minerals, reducing their absorption.


6. Trypsin Inhibitors: Found in legumes and some grains. Can interfere with protein digestion.

How to reduce or neutralized anti nutrient 

Through:

  • cooking
  • soaking
  • sprouting, or 
  • fermenting foods.
